CEO Update: The DJBean is now proudly serving Old Depot Coffee

I’m excited to announce our new partnership with Old Depot Coffee Co. at the DJBean Coffee Shop at CMH. I visited with Scott Kirchhoff, our administrative director of hospitality, and Andrew and Diana Peters, the owners of the old Depot Coffee Co., to share about this new partnership.

About Old Depot Coffee Co.

Andrew Peters: It’s always been Diana’s desire to do a coffee shop for several years, but it’s one of those things where everything would have to fall in place for that to happen.

I originally owned a metal fabrication company, and I still have that. A storefront property was where we got our start. We started construction on our building in Seymour in 2019. When COVID happened, we already had our construction material in our building. We were just working nonstop building this thing.

I didn’t know anything about roasting. Nothing. We started from scratch. I bought my first roaster about a year before we opened, and it just sat on the crate for almost the whole year while we were under construction with our building. I have a mechanical background, so I was able to understand it, how it worked. The company we bought the roaster from was very helpful as far as how to run it. So I just dove into how to roast coffee.

What’s on the menu

Calhoun: Of course, the beans, they don’t come from Seymour. You import them in. What are some of the places where you get the coffee beans?

Andrew: We’ve been buying from all over the world. The main ones are in Central America. We have Honduras, Costa Rica, Colombia, Peruvian. Just a little bit more south there. We’re pulling from Indonesia, so you’ll have Sumatra. You’ll have Java. And our African coffees are mainly Ethiopian.

Calhoun: Scott, you took your team to the Old Depot to see the process for roasting, and your staff has been trained on how to make really nice coffee with the Old Depot label on it. Tell me about that process.

Kirchhoff: Well, it was important whenever we agreed to this partnership that we wanted Andrew and Diana to be as involved as we could get them to be. That was really important to highlight the fact that we’re partnering with a local roaster. We’re partnering with somebody who’s passionate about what they do, which aligns with CMH because we’re passionate about what we do.

We wanted to see their process just because we want to showcase that process so that people understand and we know exactly what goes into this. We know the people behind this, and it very much aligns with CMH and with our desire to provide quality products and quality service.

Calhoun: Let’s talk a little bit about the menu at the DJBean and what’s going to be available for families, patients and customers that come in. What’s that going to look like for the public?

Diana Peters: With the equipment that we have now, we’re able to provide a large variety of lattes — hot, iced, frappes — all of those using our Union, as we call our espresso blend. You’re getting that good quality coffee no matter how you prefer to enjoy your lattes, whether it’s hot or iced or as a frappe.

How the partnership started

Calhoun: You all have roots in Bolivar, right? Diana, you’re from Bolivar. You’re family’s here, you grew up here and went to Bolivar High School. And Andrew has a lot of family here in Bolivar. It was really important to us as we were thinking about our new coffee shop at the hospital that we would bring in a local coffee company to join with us here.

Kirchhoff: We do a lot with our vendors and with our partners from a purchasing standpoint, but very rarely do you ever get something that you literally base decision on as far as a partnership or buying in based on tasting the product. A lot of times we’re driven by the value that a company will bring in or the benefits of that partnership from a business standpoint. But really, what it boiled down to was Mike gave me some really good coffee. It was so good that we had to talk about how we could make this partnership happen.

Calhoun: You can really taste the difference when you taste this Old Depot coffee because it’s smooth. You can tell it’s fresh. And our staff are well trained to be able to make it the way it’s supposed to be made. We’ve got all the right equipment to do it.

I think you’ll enjoy, the coffee that you’re getting at DJBean. It’s open to the public, so anybody who wants to come in to the lobby here at the Douglas Center and get some Old Depot Coffee, you can do that. When we open our new hospital, which we’re planning to open the new portion of the building in January of 2026, an additional DJBean Coffee Shop will be located there. We welcome our community in, as we always do, to our facilities.
